Our oils On the green Chianti hills

The Podere di Marcialla farm is located on a green Chianti hill,
halfway between Florence and Siena and covers an area of 28 hectares of which 13 are vineyards and 8 are olive groves.

Extra virgin olive olil "Blend" organic

Origin: Extra Virgin Olive Oil obtained from the pressing of olives of the Frantoio, Moraiolo, Leccino and Pendolino varieties.

Production area: MARCIALLA – Barberino Tavarnelle – FLORENCE – Tuscany – Italy

Colour: Light green

Aroma: Fruity green olive, clean, fragrant and fresh. There are clearly detectable hints of green olive, artichoke and green leafy vegetables. Good persistence and complexity. Notes of aromatic plants/spices.

Taste: The oil enters the mouth pleasantly fresh, first developing its balanced characteristics of pepperiness, then its bitterness afterwards, which are harmoniously integrated. Notes of artichoke and chicory are confirmed on the palate. The persistence of positive vegetal sensations in the mouth is noteworthy. The bitterness and pepperiness are very pleasant and of medium intensity, with the latter persisting in the mouth for a long time. 

Aftertaste: The freshness of the oil is maintained in the aftertaste, leaving the mouth very clean with a sensation of “cleanliness” and herbaceousness.

General characteristics: A True Tuscan Blend that fully reflects the territory and varietal origins from which it derives. Lively and fragrant, it has great character while maintaining a marked harmony between the different sensations.

Extra virgin olive olil "Frantoio" organic

Origin: Extra Virgin Olive Oil obtained exclusively from the pressing of olives of the FRANTOIO variety.

Production area: MARCIALLA – Barberino Tavarnelle – FLORENCE – Tuscany – Italy.

Colour: Bright green

Aroma: Fresh, fruity green olive/right degree of ripeness. Intense and complex. There are clear notes of artichoke and cardoon combined with sensations of cut grass, roasted coffee and green almonds. The complexity of the perceived aromas persists for a long time, accompanied by pleasant hints of rocket, olive leaf and a slight sensation of green tomato.

Taste: Full bodied, decisive and fluid. In the mouth, it fully confirms the notes of caffeine, artichoke and freshly cut grass. The oil maintains a clear hint of olive leaf. Very balanced on the palate, never aggressive, with evident but well matched and balanced bitterness and pepperiness. 

Aftertaste: Clean and persistent. Medium-high intensity of bitterness and pepperiness with a final note of green.

General characteristics: A TYPICAL TUSCAN oil with character. It combines a broad and complex aroma with a full and fresh taste. The many aromatic and flavour notes present make the oil complex and complete. It is rich in Polyphenols and Tocopherols. If stored correctly, it retains its freshness over time.
‘FRANTOIO’ can therefore be defined as a majestic oil in terms of the expressiveness of its characteristics.
